Chicken BBQ on Wheat Kaiser with Fruit Slaw

Boneless skinless chicken breasts, 4 oz. raw weight
2 1/4 cups Tomato paste
1 Medium onion, diced
1 1/2 cups Apple juice
1 cup Apple cider vinegar
1/4 cup Apple butter
1/4 cup Brown sugar, packed
1 1/2 tsp. Minced garlic
1 tsp. Ground ginger
1 tsp. Dry mustard
1 1/2 cups Green cabbage, thinly sliced
Granny smith apples, peeled and grated
Firm pears, peeled and grated
3 tbsp. Honey
3 tbsp. Cider vinegar
1/3 cup Water
10 Whole wheat kaiser rolls

Recipe Directions:

  1. Bake chicken at 350 degrees (convection oven 400 degrees) for approx. 20 minutes or until internal temperature reaches 165 degrees.

  2. "Pull" the meat in bite size pieces.

  3. Mix tomato paste, onion, apple juice, vinegar, brown sugar, apple butter, garlic, ginger and dry mustard.  Simmer to develop flavor.

  4. Steam cabbage, apples and pears.  Heat honey, vinegar and water until syrupy.  Add to slaw.  Keep hot for service.

  5. Serve #12 scoop chicken BBQ and #12 scoop fruit slaw on 1 roll.
