Amount:

Ingredients:

1/2 Cup

Onions, diced
3 Cups Salsa
3 Cups rinsed and drained Black beans, cooked
3 Cups Diced tomatoes in juice
3 Cups Corn
1/4 tsp. Cayenne pepper
1 tsp. Ground cumin
24-6 inch Corn tortillas (each tortilla weights 1/2 oz.)
4 1/2 cups Chicken breast, cooked, chilled and diced
1#  Part-skim mozzarella cheese

Recipe Directions:

  1. In kettle, mix onion, salsa, cooked black beans, canned tomatoes, corn, cumin and cayenne.

  2. Bring to boil, then reduce heat to low and cook, stirring often, 5 minutes or until thoroughly heated.

  3. Spray baking dish )approximately 12 inch x 9 inch) with Pam.

  4. Layer in each pan: 1 Quart sauce, 8 tortillas, 2 cups cooked diced chicken, 2 cups cheese, 1 quart sauce, 2 cups cheese

  5. Bake at 300 degrees (350 degree conventional oven) for 15-20 minutes or until golden and bubbly.
