Fresh Salmon with Nicoise-Style Salad

Ingredients:

Fresh salmon skinned, cut diagonally in 4 oz. fillets
2 tbsp. Fresh lemon juice
1 1/3 cups New red potatoes, small "B: size, skin on, quartered, blanched, shocked
1 1/3 cup Frozen whole green beans, thawed
1/3 cup Fresh diced tomatoes
1/3 cup Green peppers, diced
1/3 cup Zucchini, peel on, diced
2 tbsp. Lite olive oil vinaigrette
2 tbsp. Water
6 oz. (weight) Mixed salad greens
1/2 cup Shredded purple cabbage
1/4 cup Shredded carrots

Recipe Directions:

  1. Brush salmon with lemon juice.  Bake at 375 degrees for 15-20 minutes until internal temperature is 155 degrees.  Chill quickly.

  2. Combine potatoes, tomatoes, pepper and zucchini.  Toss with vinaigrette and water, cover and hold under refrigeration.

  3. Mix salad greens, purple cabbage and carrots.

  4. On 1 side of the plate, portion 1 cup salad greens.  Top with 1 salmon fillet.  To the side, portion 1/2 cup nicose salad.  Keep cold (41 degrees or below) for service.

  5. Offer honey balsamic dressing on the side.
