Grilled Balsamic Chicken Parmesan

Boneless skinless chicken breasts, 4 oz. each
1 quart Balsamic vinegar
1 # Garlic
2 tbsp. Low sodium chicken base
1/2 gallon Water
1/2 cup Oregano
200 each Fresh basil leaves
10# Green pepper, sliced
10# Red tomato, sliced
6 1/4# Mozzarella cheese, part skim milk

Recipe Directions:

  1. Mix vinegar, garlic, oregano, chicken base and water.  Pound out breast top with vinegar mix.  Cover and chill to 41 degrees or less overnight.

  2. Bake in 350 degree convection oven 20 minutes or until internal temperature reaches 165 degrees.  Top with basil leaf, slice of pepper, tomato and cheese (1/4 cup shredded each). 

  3. Bake at 500 degrees until cheese is melted.
