Boneless Skinless Chicken Breasts, 4 oz. each
1 cup Taco Seasoning Mix (without salt)

Recipe Directions:

  1. Bake chicken in 350 degree convection oven for 20 minutes or until the internal temperature is 165 degrees.  Cut each breast in 4 strips.  Serve 2 strips per mini wrap.  Keep hot for service (145 degrees).

Chili Powder
3 Tbsp. Cumin
2 tsp. Crushed Red Pepper
3 Tbsp. Garlic Powder
2 tsp. White Pepper
1 tsp. Cayenne Pepper

  1. Mix all ingredients together.

2 1/2 Quarts Water
4 oz. Vegetarian Base Low Sodium
3/4 lb. Onions, diced
1/3# Green Peppers
3/4 oz. Garlic Minced
3 Tbsp. Paprika
3/4 tsp. Cayenne Pepper
2 Tbsp. Chili Powder

Recipe Directions:

  1. Cook Rice in water and seasonings.  Add tomatoes and Kidney beans.  Keep hot for service.

Each wrap gets:

1 corn tortilla

2 Tbsp. Velveeta Cheese

Choice of 2:

2 strips chicken

1/4 cup corn and black bean salsa

1/4 cup Spanish rice
