Pita fold
1/4 Cup Pizza sauce
1/4 Cup Red tomato, diced
1 Tbsp. Red onion, sliced
2 Tbsp. Green pepper, sliced
1 Tbsp. Black olives
1 piece Fresh basil
To taste Fresh black pepper
1/4 Cup Mozzarella Cheese, part-skim

Recipe Directions:

  1. Preheat the oven to 400 degrees  (450 degrees conventional oven).

  2. Place the pita in pans or on a baking sheet.

  3. Spread the sauce to within 1/2 inch of the edge.

  4. Sprinkle with mozzarella.

  5. Arrange the vegetables decoratively over the cheese.

  6. Sprinkle with basil and drizzle with pepper.

  7. Bake until cheese is melted and the vegetables are tender, about 10 minutes.
