Cod Fillets

3 Potatoes, diced, cooked
2 Medium Onions, diced
2 Medium Carrots, sliced thin
2 Cloves of Garlic

2 Medium Tomatoes, diced
1 cup Low Sodium Chicken Broth
1 ½ oz. Black Olives, sliced
½ tsp. Thyme
2 Tbsp. Lemon Juice
