Cheesy Soybean Casserole

Amount:

Ingredients:

2 Cups, cooked

Soy Beans
2 Cups, cooked Brown Rice
1/2 Cup Liquid Eggs
2 Cups 1% Cottage Cheese
1/2 Cup Parmesan, shredded
1/2 lb. Mushrooms, sliced, canned
1/4 cup Onions, chopped
2 Cloves Garlic, chopped
1 tsp. Thyme, dried
1 tsp. Basil, dried
1 tsp. Marjoram, dried
To Taste Black Pepper and Cayenne
1/2 Cup Plain breadcrumbs
2 Medium Tomatoes, sliced

Recipe Directions:

  1. Soak beans overnight in enough water to cover beans.  Cook beans in lots of water for 3 hours.

  2. Saute onions, garlic, mushrooms, and herbs in PAM, until onions are soft.

  3. Combine all but last three ingredients.

  4. Spread mixture into 1/2 size STP sprayed with PAM.

  5. Top each pan with 1.2 cup breadcrumbs and 12 slices of tomato.

  6. Bake, uncovered in a 300 F convection oven, 40 minutes.
