Chicken with Pineapple Salsa

Ingredients:

1 cup

Canned pineapple tidbits
1/2 cup Diced green bell pepper
1 cup Frozen corn kernels, thawed
1 lb. Black beans, dry
1/4 cup Onions, chopped
1 tbsp. Green chile peppers, chopped
1/4 cup Orange juice
1/4 cup Fresh cilantro, chopped
1/2 tsp. Ground cumin
8 (4 oz.) Frozen chicken breast, boneless/skinless

Recipe Directions:

  1. Soak beans overnight and prepare accordingly to package directions.

  2. In a large bowl, toss together pineapple, green bell peppers, corn, black beans, onions, green chile peppers, orange juice, and cilantro. 

  3. Season with cumin, salt, and pepper.  Cover and chill in refrigerator until serving.

  4. Prepare chicken breast according to directions on package.

  5. Warm salsa and use it to top chicken breast.
