Amount:

Ingredients:

4 Boneless, Skinless Chicken Breasts (4oz each raw weight)
2/3 tsp. Chili Powder
2/3 tsp. Cumin
3/4 cup cooked Black Beans
3/4 cup Corn
1/4 cup Cilantro
1/2 cup Diced Red Tomato, Fresh
1/2 cup Salsa

Recipe Directions:

1. Soak beans overnight in water to cover double the beans. Drain and rinse. To cook beans, cover with water and bring to boil. Boil for 3 minutes. Turn off steam and allow to stand for 1 hour. Cook slowly until tender, 1 –1 ½ hours

2. Sprinkle thawed chicken breasts with chili powder and cumin. Bake at 350 degrees (400 degrees conventional oven) for 20 minutes or until internal temperature reaches 165 degrees.

3.While chicken is baking, add corn and cilantro to beans. Heat vegetables.

4. In serving pan, drape hot vegetables over center of chicken (1/3 cup vegetables per serving of chicken). Garnish with diced tomato. Serve salsa on the side.
