Chicken Orange Stir Fry

Ingredients:

11 oz Canned mandarin oranges
1/3 cup Orange juice
2 tbsp. Lite soy sauce
1 tbsp. Minced ginger
½ tsp. Sesame oil
½ tsp. Minced garlic
½ lb Skinless, boneless chicken breast cup into strips
1 cup Diagonally sliced asparagus
½ cup  Sliced green peppers
½ cup Sliced zucchini
½ cup Sliced carrots
½ cup Chopped celery
½ lb Green beans, sliced
8 oz  Mushrooms sliced
1 ½ tsp.  Cornstarch
8 oz  Dry weight whole wheat pasta
2 tbsp.  Slivered almonds

Recipe Directions:

  1. Drain oranges and reserve syrup
  2. Combine orange juice, soy sauce, ginger, sesame oil, and garlic in a bowl. Whisk.
  3. Add chicken to juice mixture and marinate for 1 hour.
  4. Stir fry vegetables until crisp. Add mushrooms last.
  5. Remove vegetables from pan when crisp and add chicken to pan.
  6. Stir fry chicken until done and then return vegetables to pan.
  7. Combine reserved syrup and cornstarch in small bowl and whisk.
  8. Add syrup mixture to stir fry pan and cook until slightly thick.
  9. Serve over pasta and almonds .
