Cumin-Dusted Tilapia with Peach Salsa

Amount:

Ingredients:

½ cup Yellow Cornmeal
1 tsp. Cumin
1 lb. Tilapia Fillets, thawed 3-5 oz. Each
1 2/3 cups Peaches in Juice, dice and reserve juice
2 cups Fresh Diced Tomato
2 Tbsp. Fresh Cilantro, chopped
2 tsp. Lime Juice
¼ cup Frozen Corn, thawed
1 Fresh Limes, cut in 6 wedges or slices

Recipe Directions:

  1. Prepare peach salsa:  Mix diced peaches, diced tomato, cilantro, lime juice & corn.

  2. Mix cornmeal and cumin.  Coat fish with cornmeal mixture.  Bake in 350 degree oven for 10 minutes.  Arrange 12 pieces of fish in a shot-gun pan.  Pour 6 cups salsa over center of pan.  Continue baking for another 10 minutes or until internal temperature of fish reaches 155 degrees.
