Greek Pita Wrap with Seasoned Eye of Round

Ingredients:

1 1/3# raw weight

Roasted eye of round (not deli meat) slow roasted from raw state
1 tbsp. Ground coriander
2 tsp. Dried oregano
1 tsp. Dried sage
1/2 tsp. Black pepper
1/2 tsp. Garlic powder
1/4 tsp. Ground cinnamon
Salad Mix:
1 1/2 cups Shredded lettuce
3/4 cup Spinach leaves
1/3 cup Diced fresh tomatoes
1/3 cup Diced green pepper
1/3 cup Sliced black olives, rinsed and drained
1/3 cup Diced cucumber with peel
Tzatziki:
8 oz. Sour cream
2/3 cup Cucumber
1/3 tsp. Garlic powder
1/3 tsp. Onion powder
Dash Ground white pepper

Recipe Directions:

  1. Mix dry seasoning and sprinkle over raw roast, top and bottom.  Place in slow cooker and roast until center reaches 145 degrees. 

  2. Cut roast in half and cool quickly (to 70 degrees or below in 2 hours, then to less than 41 degrees in 2 more hours).  Cut in 1 oz. strips.  Keep cold for service.

  3. Clean and mix salad ingredients

  4. Chop cucumbers very finely in food processor or chopper.  Mix in other ingredients.  Keep cold (below 41 degrees) for service.
