Greek Scramble

Ingredients:

3 Tbsp. Fresh Mint, minced
1 Tbsp.

Fresh Parsley, minced

½ tsp. Dried Oregano
2 cups (packed) Fresh Spinach, trimmed

Recipe Directions:

  1. Mix vegetables.

  2. Sauté on non-stick surface sprayed with Pam to heat thoroughly. 

  3. Keep hot.

2 cups Pasteurized Egg Substitute
½ cup Crumbled Feta
½  cup Diced Fresh Tomatoes
  1. Spray grill or pan with non-stick spray.  For each serving, use:

    • ½ cup egg substitute

    • ¼ cup green vegetable mixture

    • 2 Tbsp. Crumbled Feta

    • 2 Tbsp. Diced Fresh Tomatoes

  2. Portion egg substitute onto grill.  Top with

    green vegetable mixture.  When the eggs

    are almost set, sprinkle with feta cheese. 

    Garnish with diced tomatoes.  Make sure

    eggs are 155 degrees.  Serve immediately.
