Salmon Cakes with Lemon Sauce

¼ cup

Fat Free Miracle Whip

½ tsp.

Freshly Grated Lemon Peel

2 ½ tsp.

Fresh Lemon Juice

2 ½ tsp.

Skim Milk

¾ tsp.

Fresh Dill, chopped

Mix above ingredients together.  Keep cold for service (below 45 degrees).

1 lb. Canned Salmon, cleaned
1/4 cup Bread Crumbs
1 ½ Tbsp. Onions, diced
¼ cup Egg Substitute
¼ cup Fat Free Miracle Whip
2/3 tsp. Old Bay Seasoning
1 ½ Tbsp. Parsley Flakes
Clean salmon;  mix it and remaining ingredients (reserve ½ of bread crumbs for outside of patty) in chopper or processor.  Portion into ½ cup patties.  Lightly press patty in reserved bread crumbs.
Cook in skillet sprayed with Pam until heated through and browned.   Serve with sauce.
