Fresh Salmon with Nicoise-Style Salad

Ingredients:

1lb Fresh Salmon skinned, cut diagonally in 4 oz. fillets
2 Tbsp. Fresh Lemon Juice
Recipe Directions:
  1. Brush salmon with lemon juice. 
  2. Bake at 375 degrees for 15-20 min. until internal temperature is 155 degrees.  
  3. Chill quickly.
1 1/3 cups New Red Potatoes, small “B” size, skin on, quartered, blanched, shocked
1 1/3 cup Frozen Whole Green Beans, thawed
1/3 cup Fresh diced Tomatoes
1/3 cup Green Peppers, diced
1/3 cup Zucchini, peel on, diced
2 Tbsp. Lite Olive Oil Vinaigrette
2 Tbsp. Water

Recipe Directions:

  1. Combine potatoes, tomatoes, pepper and zucchini.

  2. Toss with vinaigrette and water, cover and hold under refrigeration.

6 oz. (weight) Mixed Salad Greens
½ cup

Shredded Purple Cabbage

¼ cup Shredded Carrots
Recipe Directions:
  1. Mix salad greens, purple cabbage and carrots.

  2. On 1 side of the plate, portion 1 cup salad greens.  Top with 1 Salmon Fillet.  To the side, portion 1/2 cup Nicose Salad.  Keep cold (41 degrees or below) for service.
  3. Offer Honey Balsamic Dressing on the side.
