Amount:

Ingredients:

½ cup Onions, diced
3 cups Salsa
3 cups Vegetarian Refried Beans
3 cups Diced Tomatoes in Juice
3 cups Corn
¼ tsp. Cayenne Pepper
1 tsp. Ground Cumin
24-6 inch Corn tortillas (each tortilla weights ½ oz.)
1# Salad Shrimp, unbreaded
1# Part-Skim Mozzarella Cheese

Recipe Directions:

In kettle, mix onion, salsa, refried beans, canned tomatoes, corn, cumin & cayenne.  Bring to boil, then reduce heat to low, and cook, stirring often, 5 minutes or until thoroughly heated. 

Spray baking dish (approximately 12 inch X 9 inch) with Pam. 

Layer in each pan:

  • 1 Quart sauce

  • 8 tortillas

  • 1 ½ cups refried beans

  • ½ # shrimp

  • 2  cups cheese

  • 2 ½ c. sauce

  • 8 tortillas

  • 2 ½ cups sauce

  • 2 cups cheese

 

Bake at 300 degrees (350 degree conventional oven) for 15 to 20 minutes or until golden and bubbly.
