Amount:

Ingredients:

2 cups cooked

Black beans
8 oz. Tempeh cut into half-inch cubes
2 tbsp. Onion, chopped
2 tbsp. Green pepper, chopped
1 tsp. Garlic cloves, minced
1 1/2 cups Water
2 tbsp. Cider vinegar
1/2 tsp. Cumin
3 tbsp. Marinara sauce
2 tsp. Sugar
3 10 inch tortillas
2 tbsp. Fresh tomato, diced

Recipe Directions:

  1. Soak beans overnight in double the amount of water.  Cook and drain.

  2. Bring all ingredients except tomatoes and tortillas to a boil and reduce to simmer.

  3. Simmer for 30 minutes.  Keep hot for service.
