Caramel Glazed Pear Cake with Fresh Fruit

Ingredients:

Pear Cake

3 cups Pears, canned in juice, diced
2/3 cup Liquid Egg Substitute
1 cup Sugar
1 ¼ cups Unsweetened Applesauce
1 ½ cups Whole Wheat Flour
1 ½ cups All Purpose Flour
½ tsp. Salt
1 tsp. Baking Soda
½ cup Pecans, coarsely chopped
2 tsp. Vanilla Extract

Carmel Glaze

½ cup

Brown Sugar

 

¼ cup Evaporated Skim Milk

Recipe Directions:

  1. Beat egg substitute, sugar and applesauce at medium speed with an electric mixer until well blended.  Combine flours, salt, and baking soda, and add to egg mixture, beating at low speed until blended.  Fold in pears, chopped pecans and vanilla.  Pour batter into a Bundt pan sprayed with Pam.  Bake at 300 degrees (350 degrees conventional oven) for 1 hour or until a wooden pick inserted in center of cake comes out clean.  Remove from pan, and drizzle Caramel Glaze over warm cake.

  2. For the Caramel Glaze stir together brown sugar and milk in a small saucepan over medium heat;  bring to a boil, and cook, stirring constantly, 2 ½ minutes or until sugar dissolves.

  3. Slice cakes in 16 slices each.  Serve each slice with ½ cup fresh sliced fruit
