Chocolate Zucchini Cake with Fresh Fruit

Ingredients:

1 ½  cups

All Purpose Flour
1 ½  cups Whole Wheat flour
1 ½ tsp. Baking Powder
½ tsp. Salt
¾ cup + 1 Tbsp. Liquid Egg Substitute
1 ½  cups Granulated Sugar
¼ cup Unsweetened Cocoa Powder
1 ½  cups Unsweetened Applesauce
3 cups Grated Zucchini peel on
1 cup Soy Nuts chopped
2 Quarts Fresh Fruit Cup

Recipe Directions:

  1. Combine flours, baking powder, salt and cocoa.

  2. Beat egg substitute at medium speed with an electric mixer. 

  3. Gradually add granulated sugar; beat until blended. 

  4. Add applesauce; beat until blended. 

  5. Gradually add flour mixture; beat at low speed until blended. 

  6. Fold in zucchini and soy nuts.  

  7. Pour batter into a bundt pan sprayed with Pam.

  8. Bake at 300 degrees (350 degrees conventional oven) for 1 hour and 15 minutes or until a wooden pick inserted in center comes out clean. 

  9. Cool in pan 15 minutes. 

  10. Remove from pan;  cool completely on a wire rack.

  11.  Served with ½ cup fresh fruit.
