Two-Potato Salad with Spinach and Herbs

Ingredients:

Diced White Potatoes
1 # Fresh Sweet Potatoes, peeled and cut into ½ inch pieces
¼ cup Dijon Mustard
3 Tbsp. Cider Vinegar
¼ cup Water
¾ cup Diced Celery
1 Tbsp. Rosemary
1 Tbsp. Thyme
4 cups Fresh Spinach Leaves, washed and torn into bite-sized pieces, tightly packed

Recipe Directions:

  1. Put boiling potatoes and sweet potatoes in two separate pans to cook. 

  2. Heat until barely tender.

  3. Whisk together mustard, vinegar and water. 

  4. Add onions and herbs.

  5. Drain potatoes and transfer to a shallow pan and cool quickly to 41 degrees. 

  6. Toss with spinach, dressing and herbs.

  7. Keep cold for service.
