This easy, delicious dinner is sure to be a repeat in your meal planning. It packs a flavorful alternative to tomato sauce by using avocado and lemon juice. With about 20 vitamins and minerals per serving, avocados are a good source of B vitamins, which help you fight off disease and infection.


Serves 4

8 ounces dried or frozen cheese tortellini
2 avocados, pitted and diced
1 lemon, juiced
1/8 cup water
1 cup of grape tomatoes, diced
Salt and pepper to taste
Optional: Parmesan cheese, grated or shredded

Boil and cook tortellini, according to package directions. Pit, peel, and dice two avocados. Juice lemon. Add both ingredients to food processor or blender along with 1/8 cup water. Blend until the sauce is smooth scraping the sides of the food processor/blender. Halve grape tomatoes. Strain tortellini when fully cooked and return to the pan over low heat. Add avocado sauce and grape tomatoes. Sprinkle with salt and pepper. Stir until combined and enjoy. Top with Parmesan cheese, if desired.
